But as we have been customers for several years, even though some recipes may have changed as well as some menu items, the quality has remained consistent.  That tells me one of two things:  that you have an eye for hiring young chefs with potential, and that you are able to impart your standards on the new hires.

Hang in there.  When someone leaves that you have invested time and effort in, I&#039;m sure it seems like a slap in the face.  But that seems to be the nature of the business.  You guys are doing a great job and have a jewel of a restaurant.
